  • Chickpeas
  • Cucumber
  • Tomatoes
  • Avocado
  • Fresh basil
  • Salt and pepper
  • Optional mix-ins: diced red onion, feta cheese, pecans, raisins, dried cranberries, diced cooked chicken, crumbled cooked bacon
  • Optional dressing: tahini
  • Optional lettuce (to serve the salad on a bed of lettuce)

Gather your ingredients…

… and prep your vegetables.

TIP: Make sure you dice the veggies into small pieces. This gives you maximum taste variety in every delicious bite!

In a large bowl, mix all the veggies and add salt and pepper to taste. I love to drizzle a bit of tahini on top when I serve it!

You can stop right here and have an incredible dish (this recipe can be either a side dish or a main meal), or you can enhance your salad with these optional mix-ins:

  • Diced red onion, feta cheese, pecans, raisins, dried cranberries, diced cooked chicken, crumbled cooked bacon (or really anything you think sounds good – you’re the artist of this salad! 🎨)

You can also choose to serve it on a bed of lettuce. One of my favorite variations is to add diced cubed chicken and serve it on a bed of Bibb lettuce.

Ingredients

  • 2 cans chickpeas drained and rinsed
  • 1 1/2 cups diced cucumber
  • 1 1/2 cups diced tomatoes
  • 1 cup cubed avocado
  • Chopped fresh basil to taste
  • Salt and pepper to taste
  • Optional mix-ins: diced red onion, feta cheese, pecans, raisins, dried cranberries, diced cooked chicken, crumbled cooked bacon
  • Optional dressing: tahini
  • Optional lettuce (to serve salad on a bed of lettuce)

Instructions
