In a large bowl, mix all the veggies and add salt and pepper to taste. I love to drizzle a bit of tahini on top when I serve it!

Ingredients
- 2 cans chickpeas drained and rinsed
- 1 1/2 cups diced cucumber
- 1 1/2 cups diced tomatoes
- 1 cup cubed avocado
- Chopped fresh basil to taste
- Salt and pepper to taste
- Optional mix-ins: diced red onion, feta cheese, pecans, raisins, dried cranberries, diced cooked chicken, crumbled cooked bacon
- Optional dressing: tahini
- Optional lettuce (to serve salad on a bed of lettuce)
Instructions
- Combine all ingredients in a bowl and mix. Feel free to add any optional mix-ins or omit them altogether.
