Prediction: this recipe is going to change your life.
Maybe that sounds a little dramatic, but I am absolutely certain it’s a recipe that is going to become a dietary staple for keto dieters around the world. It is THAT good. When you have a recipe like this in your life, you say to yourself, “Yep, I can do this keto thing.”
I even tested it on a few folks who aren’t on the keto diet. There were a lot of OH MY GODs and various (happy) curse words that I probably shouldn’t repeat on this blog. 😉 The batch I made was gone in about two seconds… and I’ve literally thought about it every day since.
I am sure you figured out from the title that this recipe is a keto copycat version of the oh-so-delicious Muddy Buddies™ / Puppy Chow / Monkey Munch / Muddy Munch / Reindeer Chow (it has so many names!) recipe. If you have no idea what I’m talking about, all you need to know is chocolate, peanut butter, Chex cereal, and powdered sugar. (And rest assured, this is not a dog food recipe!)
Obviously, cereal and powdered sugar are a no-no on the keto diet. But don’t worry, friends… I’ve got you covered. I made a version that is low in carbs and is darn close to the original texture. (Personally, I think this version is even better than the “real” thing!)
Main Ingredients Needed for Keto Muddy Buddies
Before we get into the recipe, let’s start with the ingredients you’ll need. This recipe uses a few specialty ingredients, but they’re all easy to find (and you’ll be able to use them for plenty of other recipes).
The star of the show and the whole reason this recipe is possible. It looks, tastes, and measures just like real confectioners sugar! Because sugar alcohols do not count toward net carbs, it contains 0g net carbs.
I used macaroon coconut in these because it comes finely ground. If you don’t want to purchase this kind, you can put regular unsweetened coconut flakes in a food processor or coffee grinder to get a finely ground texture.
Plus a few easily sourced ingredients like vanilla extract, butter, and eggs.
How to Make Keto Muddy Buddies
There are two steps to this recipe: 1) making the keto copycat Chex cereal and then 2) making the actual Keto Muddy Buddies. The cereal doesn’t take long to make, and it’s actually a stellar recipe on its own. Try it in a bowl of unsweetened vanilla almond milk with a bit of stevia for a delicious keto breakfast or snack!
Start by Making the Keto Cereal…
Step #1: Combine dry cereal ingredients in a bowl, then add wet cereal ingredients. Mix well. This will be a thick, sticky batter.
Step #2: Spread cereal batter onto a non-stick cookie sheet. I highly recommend using a silicone baking mat on your cookie sheet for best results. Try to spread out the batter as thin as possible and as evenly as possible, but it’s not going to be perfect (see the photo above for my imperfect batter thickness). The thinner it is, the crunchier the cereal will be. Trust me when I say you won’t care if it’s not as crunchy as Chex when it’s coated with peanut butter, chocolate, and Swerve powdered “sugar.” 🙂
Step #3: Put your cookie sheet in the oven for 12 minutes.
Step #4: Remove cookie sheet from oven. Carefully flip over your “mat” of cereal and let it cool for a minute or two.
Step #5: Using a sharp knife (or even kitchen shears), cut your cereal mat into thin strips. Then, cut the thin strips into small, Chex-sized pieces.
Step #6: Place your cookie sheet back into the oven and cook for 10 minutes.
Step #7: Remove cookie sheet from the oven and make sure your cereal is cooked enough. Note that it will firm up a bit after it cools down, so don’t overcook (or burn) it. If it needs a bit more time, return it to the oven for a minute or two.
Your cereal is ready! Again, this can be enjoyed as-is. It has a nice sweetness to it and makes for a great breakfast or snack.
Then Make the Keto Muddy Buddies…
Step #1: Add the chocolate chips, peanut butter, and butter to a large, microwave-safe bowl.
Step #2: Microwave the mixture on high for one minute, then stir in vanilla extract. Continue to stir until the mixture is evenly melted and no lumps remain.
Step #3: Combine mixture and cereal and stir until each piece of cereal is evenly coated.
Step #4: Add the coated cereal to a 1-gallon Ziploc bag.
Step #5: Add Swerve to bag, zip the bag closed, and shake until the cereal has been sufficiently coated with Swerve.
Step #6: Open the bag and place the cereal on a non-stick cookie sheet. Chill the Keto Muddy Buddies for at least 15 minutes before serving.
Step #7: Dig in and ENJOY!
Note: Swerve dissolves a bit more than regular powdered sugar, so these aren’t as white as the original recipe, but the flavor is 100% spot-on. If you really want that traditional coloring, you could dust a light coating of Swerve on them right before they’re fully set. Just be warned that they might be too sweet if you do that.
Servings in Keto Muddy Buddies
This recipe yields 15 servings, each of which is about 1/3 cup. (For most accurate results, weigh the whole recipe and divide it by 15 to get the perfect serving size.)
Each serving is 3g net carbs. I assure you that 1/3 cup is plenty — this stuff is so sweet that you don’t need a lot to be satisfied. However, if you find yourself dying for more servings, only 3g net carbs per servings gives you enough wiggle room to have 2 or maybe even 3 servings. No judgment from me. 🙂 As a comparison, regular Puppy Chow is 29g net carbs per serving!
