Little Debbie Cosmic Brownies, if you haven’t had the joy of trying them, are rich, fudgy brownies topped with a thin layer of chocolate frosting and colorful mini chocolate chip candies. Many Cosmic Brownie copycats, including these Keto Brownies, use ganache and rainbow sprinkles as the topping. While not exactly the same as the original, I assure you that they have the same “wow factor” and “yum factor.” 🙂

- Heavy whipping cream
- Keto-friendly semi-sweet chocolate chips (I used Lily’s; I typically use Lily’s keto chocolate chips.)
- Butter (skip this ingredient if you’re using your own keto brownie recipe)
- Eggs (skip this ingredient if you’re using your own keto brownie recipe)
*For convenience, I used SuperFat’s Keto Brownie packaged mix. Although their packaged brownie mix is fantastic (especially if you follow my two tips below), if you have a keto brownie recipe that you would prefer to make from scratch, you can do that instead. At the end of this post, I’ve also provided nutrition information for the toppings only in case you need to calculate macros using your own brownie recipe.

How to Make These Keto Cosmic Brownies {Quick Overview}
This is just a quick overview of some of the steps involved in making the low carb brownies. For the recipe in detail, including exact measurements used at each step, scroll to the recipe card at the end of the post.
Phase 1: Make the Brownies
If using SuperFat Keto Brownie Mix, follow the instructions on the bag to bake the brownies, making sure you follow my two tips below. (Pictures 1-4)
My Two Must-Follow Tips for Making SuperFat Keto Brownies
- The package gives you the option of using butter or coconut oil in the mix. Use butter. Otherwise, the brownies firm up too much in the fridge and get a bit crunchy.
- Like the package says, do not overbake. You only want the edges to be firm; the middle will still be soft when you put it out of the oven. Again, if you overbake, the brownies will get a bit crunchy.
If not using SuperFat Brownie Mix, note that this recipe is made in an 8″x8″ pan and contains 16 servings.
Phase 2: Make the Ganache
To make the ganache, you will heat heavy whipping cream over medium-high heat until almost boiling. Pour the heated heavy whipping cream over chocolate chips, stir to distribute the cream, and let sit for two minutes. (Picture 5)
After two minutes, use a spoon or spatula to fully combine the heavy whipping cream and chocolate chips. The result will be shiny and smooth. (Picture 6)
Pour the ganache over the brownies, tilting the pan as needed to evenly distribute the ganache. (Picture 7)
Phase 3: Add the Sprinkles
The best part: add the sprinkles! You must do this immediately or they will fall off when cutting the brownies.
After you add the sprinkles, lightly press them into the ganache to ensure they will stick. (Picture 8)
Phase 4: Cool and Serve Brownies
Allow the brownies to cool (on the counter or in the fridge) until the ganache is set. Cut into 16 even pieces and enjoy!

- 3 oz semi-sweet keto-friendly chocolate chips
- 6 tbsp heavy whipping cream
Sprinkles
- 1/3 cup SuperFat Rainbow Sprinkles approximately 2/3 of a single bag

Brownie Instructions
- Prepare SuperFat brownies according to package instructions.
Ganache Instructions
- Add chocolate chips to a small bowl.
- In a small saucepan over medium-high heat, heat heavy whipping cream until it is almost boiling.
- Remove pan from heat and pour heavy whipping cream over chocolate chips. Stir quickly to distribute the cream, and let sit for two minutes.
- After two minutes, use a spoon or spatula to fully combine the heavy whipping cream and chocolate chips. The result will be shiny and smooth.
- Pour ganache over the brownies, tilting the pan as needed to evenly distribute the ganache.
