Instructions
Preheat oven to 400°.
Spray an 8- x 8-inch baking dish with cooking spray. Set aside.
Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add red onion and cauliflower rice. Cook for 6 minutes or until cauliflower is tender.
Transfer mixture to prepared 8- x 8-inch dish. Pressing mixture lightly to flatten. Set aside and keep warm.
Add remaining 1 tbsp olive oil to pan. Add ground chicken and cook for 5-6 minutes or until chicken (or beef) is cooked through. Add broccoli, snow peas, and edamame to skillet. Cook for 2-3 minutes to soften vegetables.
Meanwhile, combine tamari soy sauce, chicken broth, ginger paste, garlic paste, Swerve Brown, and sesame oil in a measuring cup. Pour mixture over chicken (or beef) and vegetables. Cook, stirring constantly for 2-3 minutes or until mixture thickens slightly.
Stir green onions into mixture. Transfer chicken (or beef) and vegetable mixture to top cauliflower rice in dish. Sprinkle top with sesame seeds.
Bake at 400° for 10 minutes or until heated through.
