mix all wet ingredients, ending with the VANILLA EXTRACT, in a medium bowl until smooth and well-combined.

mix all dry ingredients separately, then blend wet and dry until a batter forms. it will smell amazing!

after that...

add the macadamia nuts and keto-friendly white chocolate chips. fold them in until they are evenly distributed.

then...

add the keto cookie bar batter to a dish (i used a 7"x11" casserole dish) and bake at 350 f. This is the final result!
