Add the remaining ingredients and mix using an electric or stand mixer until the batter is well combined.
Roll the dough into 12 cookie balls and place onto a well-greased cookie sheet. Space each cookie ball approximately 2” apart.
Press the cookies down in the middle using the back of a spoon or teaspoon to create a thumbprint cookie shape. Optionally smooth out any cracks in the dough at this point.
Place three chocolate chips into the indent on each cookie.
Bake for 10-12 minutes until the tops of the cookies start to brown slightly and the chocolate chips are melted.
Remove from oven and use a spoon to spread the melted chocolate around the cookie indent.
