bacon
cut into quarters, divided

boneless skinless chicken breast

ranch dressing

shredded cheddar cheese

cup
shredded mozzarella cheese

Instructions
Preheat oven to 375 F.
In a pan over medium heat, fry the quartered bacon until cooked through.
Remove 3 slices’ worth of bacon (12 pieces) from the pan and set them aside on a clean plate.
To the pan with the remaining bacon (and bacon fat), add the cubed chicken breast.
When the chicken is mostly cooked, add garlic, cauliflower, and broccoli. Cover and cook for 8 minutes, then drain excess water.
Combine chicken mixture, ranch dressing, 1/2 cup mozzarella cheese, 1/2 cup cheddar cheese and add to a 9x13” casserole dish.
Top casserole with remaining cheese.
Bake for 15 minutes.
Remove the dish from the oven. Add the bacon you set aside earlier to the top of the casserole (either as-is or crumbled).
Serve and enjoy!
