Ingredients
1lb80/20 ground beef
1medium zucchinidiced
1/2cuponiondiced
1/2cupgreen bell pepperdiced
2clovesgarlicminced
1/2cupshredded cheddar cheese
2tbspolive oil
Salt and pepperto taste
Instructions
Heat the olive oil in a large skillet over medium-high heat.
Add the diced onion and bell pepper to the skillet and cook for 2-3 minutes, or until they are tender.
Add the ground beef to the skillet and cook for 5-6 minutes, or until it is browned and cooked through.
Add the minced garlic to the skillet and cook for 1-2 minutes, or until it is fragrant.
Add the diced zucchini to the skillet and cook for 2-3 minutes, or until it is tender.
Season the beef and zucchini mixture with salt and pepper to taste.
Sprinkle the shredded cheddar cheese over the top of the beef and zucchini mixture.
Cover the skillet and cook for 2-3 minutes, or until the cheese is melted and bubbly.
