Over medium heat, saute ground beef, onion, garlic, and bell pepper until beef is cooked through and vegetables begin to soften.
Remove from heat and drain any excess fat (some is okay). Add taco seasoning and stir to incorporate thoroughly. Spoon mixture into a casserole dish (I used a 9” x 9” dish).
Combine salsa, sour cream, and 1/2 cup shredded cheese in a small bowl.
In another bowl, whisk eggs. Then, pour eggs into salsa/sour cream/cheese mixture and whisk to thoroughly combine.
Pour mixture over top of ground beef.
Place dish in oven and bake for 25 minutes or until cooked through. Add remaining 1 1/2 cups cheese and return to oven until the cheese is melted.
When cheese is melted, remove from oven and cut into six pieces. Serve and enjoy!
Notes
