Ingredients
4cupsmixed greens(I like to mix spinach, arugula, and romaine lettuce)
1lbboneless, skinless chicken breasts
1mediumavocadodiced
1/2cupcherry tomatoeshalved
1/4cupcrumbled feta cheese
1/4cupchopped almonds
2tbspolive oil
1tbsplemon juice
Salt and pepper to taste
Instructions
Preheat your oven to 375 F. Season the chicken breasts with salt and pepper, then bake them on a baking sheet for 20-25 minutes or until cooked through (internal temperature at least 165 F as measured by a meat thermometer). Let them cool for a few minutes before slicing them into strips.
In a large mixing bowl, combine the mixed greens, sliced chicken, diced avocado, halved cherry tomatoes, crumbled feta cheese, and chopped almonds.
