Add ingredients to a blender except for the melted coconut oil and blend until smooth.
Then, drizzle the melted (but not hot) coconut oil in slowly with the blender on the lowest possible setting, as if you were making a vinaigrette. It’s very important that your blender is on the lowest possible speed so the smoothie doesn’t fly out of the blender!
Pour into a glass. If desired, top with coconut chips.

Spinach version or cilantro version?
If cilantro is a flavor you enjoy, I highly recommend trying both versions.
If cilantro isn’t your thing, stick to the baby spinach version.
