There’s nothing like a hot bowl of chicken noodle soup! This Keto Chicken Noodle Soup uses keto-friendly noodles for a flavorful, comforting bowl of soup. 🍲
2packages (2 servings) fettuccine shirataki noodles, prepared (see notes)
Instructions
To a medium-sized pot or Dutch oven on medium-low heat, add butter. When butter is heated, add chopped red onion and saute until beginning to turn translucent. Add garlic and cook until onions are translucent and the garlic is starting to brown.
Add carrot, celery, chicken breast, and 1 cup chicken stock. Stir mixture thoroughly, turn heat up to medium, and cover. Cook, stirring occasionally, for five minutes or until the chicken is mostly cooked through.
Add remaining chicken stock, bay leaves, salt, pepper, and [extra seasonings]. Bring to a simmer and simmer uncovered for 35 minutes.
Add prepared shirataki noodles, stir, and cook for an additional three minutes before turning off heat.
Remove bay leaves and serve.
Notes
To prepare shirataki noodles:
Rinse your noodles thoroughly. Really, really rinse them!
Add the rinsed noodles to a pan of fresh water. Bring it to a boil and boil for three minutes. Drain water.
Pan fry the noodles in a dry, hot pan over medium heat for approximately five minutes. Stir constantly and use a spatula to separate noodle strands.
