If your air fryer has a preheat feature, set it to 400°F. (If not, simply turn it on to 400°F and let it run for 4-5 minutes before proceeding to Step 5.)
In a small bowl, combine chili powder, paprika, cumin, salt, cayenne, pepper, garlic powder, lime zest, and baking powder.
Use a paper towel to pat the chicken thighs dry. Then, coat both sides evenly with olive oil. Place them in a bowl or on a plate.
Sprinkle the seasoning mixture over both sides of the chicken thighs and rub it in evenly.
Place the chicken thighs in the air fryer basket and cook for 10 minutes.
Using tongs, flip the chicken and continue cooking for an additional 6-10 minutes until the exterior is crispy and golden brown.
Lower the air fryer temperature to 375°F. Squeeze lime juice over the chicken to taste and cook for 2 minutes. Then, turn the chicken over, add lime juice to the other side, and cook for an extra 2 minutes.
Check the internal temperature using a meat thermometer; it should reach at least 165°F. (Note that some people - myself included - prefer the taste of chicken thighs cooked to between 185°F and 195°F.)
Let the chicken thighs rest for 5-10 minutes before serving. This resting period helps to retain the juices and keep the chicken tender. Enjoy!
