Add remaining ingredients and mix using an electric or stand mixer until the batter is well combined.
Onto a well-greased cookie sheet (or two, depending on the size of your cookie sheets), form and place cookie balls using a heaping tablespoon of batter each. Space each cookie approximately 2” apart.
Use the back of a fork to flatten each cookie slightly and create a criss-cross pattern on top.
Bake for 10-12 minutes until the tops of the cookies start to brown slightly.
Remove and cool on a wire rack.

Make sure your peanut butter is well combined! When working with natural peanut butter, it’s critical that you mix the oil into the solid part of the peanut butter. The best way to do this is to empty the entire jar into a food processor and process it until smooth.
The rich peanut butter flavor of natural peanut butter is the star of these cookies! For that reason, these are moderately sweet cookies, not heavily sweet cookies. Adding more Swerve will dry out the dough, but you can use a small amount of stevia extract drops if you want a sweeter dough.
