Roasted cauliflower is nothing like those (sometimes slightly rubbery--eww) pieces of raw cauliflower you're used to dipping into ranch dressing at family reunions, baby showers, and the like. Roasted cauliflower is naturally sweet, crispy, and caramelized.

1headcauliflower, stems removed and cut into florets
On a rimmed baking sheet or in a rectangular baking dish, arrange your cauliflower florets in a single layer. Drizzle the olive oil and lemon juice, and season with salt and pepper (minced garlic optional). Toss well to cover.
Roast for 20-30 minutes, turning occasionally, until your your cauliflower is tender and browned. (Confession: I sometimes roast for up to 35 minutes because I like very crispy cauliflower.)

Tastes amazing on its own or served with a little crumbled feta or goat cheese.
