Ingredients
For the salad:

medium cucumbers
chopped
1
cup
cherry tomatoes
sliced

green olives
sliced

feta cheese
1/4
medium red onion
thinly sliced
For the dressing:
3 1/2

extra-virgin olive oil

tbsp
red wine vinegar

tsp
dried Greek oregano

tsp
minced garlic
lemon juice (ideally fresh)
to taste
Salt and pepper
to taste
Instructions
Chop and prepare all of the ingredients for the salad.
Mix the salad ingredients together in a large bowl, and toss to combine.
In a jar, combine the ingredients for the dressing. Place the lid on the jar, and shake to combine the ingredients well.
Pour the dressing over the salad, and place the salad into individual pint-sized jars or other containers for an easy on-the-go meal.
Notes
A medium cucumber and a medium red onion each weigh about 7 oz.
This will store well in the fridge for up to 24 hours.
