If you love creamy mashed potatoes, you're going to love this Keto Cauliflower Cheese Casserole. Creamy, buttery mashed cauliflower (which tastes shockingly like mashed potatoes!) is topped with cheddar cheese for a blissful keto dish.
Cut cauliflower into florets. Place in a large bowl with 1" water. Microwave cauliflower on HIGH for 14 minutes or until cauliflower is tender. Drain water from cauliflower.
Transfer mixture to the container of a food processor or blender. Add butter and heavy whipping cream. Pulse until mixture is smooth.
Stir in sour cream, 1/2 cup cheddar cheese, parsley, salt, pepper, and bacon.
Transfer mixture to a baking dish (see recipe notes for size recommendations). Sprinkle top with remaining 1/4 cup cheddar cheese.
Bake at 400 F for 10 minutes or until cheese is melted.
