This Keto Tuna Casserole is comforting, warming, and so easy to make. It's tuna noodle style with the help of keto noodles and is ready in just over 20 minutes!
Heat oil in a large nonstick skillet over medium-high heat. Adds carrots and cook for 3 minutes. Add almond flour, stirring to combine. Cook for an extra 1-2 minutes.
Combine almond milk, heavy whipping cream, Dijon, garlic powder, salt, pepper, and cayenne pepper. Add to skillet, stirring constantly. Add cream cheese and melt into mixture. Cook until mixture thickens slightly.
Add peas, tuna, noodles, and 1/2 cup Parmesan cheese. Stir well to combine.
Transfer mixture to a casserole dish. Top with remaining 1/4 cup Parmesan cheese and pork rinds.
Bake at 425 F for 10 minutes or until mixture is bubbly and pork rinds are golden.
