Combine all dry ingredients in a medium bowl. In a small bowl, combine water and olive oil.
Add wet ingredients to dry and mix thoroughly until a dough forms. (If mixture doesn’t stick together, add water a few drops at a time.)
Place the dough on a sheet of parchment paper. Place another sheet of parchment paper on top and use a rolling pin to roll the dough out as evenly as possible.
Remove the top sheet of parchment paper and transfer the crackers and bottom parchment paper to a baking sheet, then cut the crackers using a pizza cutter or knife.
Place in the oven and bake for 10-15 minutes until they’re lightly golden. The crackers around the edge will bake faster, so you can remove the crackers that are done and place the remaining crackers back into the oven.
Let cool completely before separating and storing the crackers.
Notes
How Many Keto Crackers are in a Serving? It depends on the size/thickness, and it also depends on how you'd like to measure your servings.Method #1, By Total Weight: The most accurate way to measure servings is total weight. This also makes it easier when rolling out and cutting your crackers – you don't have to stress about making them perfect because you'll simply weigh all of the finished crackers and divide the total weight by four. This is what I did for the photos in this post.Method #2, By Number of Crackers: If you roll the dough into a 9"x9" square and cut each cracker into a 1" x 1" square, you'll get 81 crackers. (Of course, you can also do other variations of this size.)
