If cheese is your love language, you are going to love this cheesy Keto Chicken Broccoli Casserole! It is bursting with cheesy goodness and wonderfully flavorful chicken and broccoli.
Place broccoli in a large bowl with 1-inch water. Microwave on HIGH for 14 minutes or until broccoli is tender. Drain water from broccoli; set aside.
In a large nonstick skillet over medium heat, heat cream cheese, sour cream, heavy cream, and Dijon mustard until melted and thoroughly combined. Stir in garlic powder, salt, and pepper. Add 1/2 cup mozzarella cheese and Parmesan cheese. Stir until melted. Remove from heat and stir in chopped, cooked chicken breast and drained broccoli.
Transfer mixture to an 8- x 8-inch baking dish. Sprinkle top with remaining 1/2 cup mozzarella cheese.
Bake at 400° for 15 minutes or until cheese is melted and lightly browned.
Notes
This recipe tastes best with fresh broccoli florets. However, if you would prefer to use frozen broccoli florets, omit step 2 and instead follow the instructions on the package to prepare the broccoli.
