Easy Baked Butternut
Baked butternut squash is naturally sweet and tastes even better topped with a little pumpkin pie spice and coconut oil. Plus, one cup of butternut squash gives you 437% of your daily Vitamin A needs!

butternut squash, peeled and cubed

pumpkin pie spice

tablespoon
virgin coconut oil
Instructions
Warm the coconut oil on the stove until it liquefies. Mix in the pumpkin pie spice and pour the mixture over the cubed butternut squash.
Place coated butternut squash in an uncovered baking dish. Bake at 350°F for approximately 35 minutes.
Notes
Want to make this into a meal? Combine it with a can of drained, rinsed black beans.
