To a saute pan on medium-low heat, add olive oil. When olive oil is heated, add chopped red onion and saute until beginning to turn translucent. Add garlic and cook until onions are translucent and the garlic is starting to brown.
Add ground turkey, stir mixture, and turn heat up to medium. Cook, stirring occasionally, until the turkey is cooked through.
Add chili seasoning and chopped bell pepper. Stir to thoroughly incorporate the chili seasoning into the turkey.
Add diced tomatoes, tomato paste, and chicken stock, and again thoroughly stir the mixture. Bring it to a low boil.
Then, reduce the heat to a gentle simmer. Simmer the chili, uncovered, for 20-25 minutes, stirring occasionally.
The chili can be served as-is or topped with cheese (cheddar is a great addition!) and/or sour cream.
Notes
Make sure to use my Homemade Chili Seasoning recipe for this chili. You will use 1 serving of the seasoning (which is half of the recipe). If you don't like your chili spicy, reduce or omit the cayenne pepper.
