Ingredients

rotisserie chicken breast, canned chicken breast, or freshly cooked chicken breast
shredded or cubed

mayonnaise

+ 2 tbsp celery
diced

red onion
diced

lemon juice

dried dill weed
or more to taste
Lemon zest to taste

Salt and pepper to taste
(optional: lemon pepper instead of regular pepper)
Bibb lettuce
for serving
Instructions
In a small bowl, mix together all ingredients except chicken.
Add chicken and mix until chicken is fully coated.
Spoon into Bibb lettuce leaves.
Notes
If you really like red onion, you can do 1/4 cup + 3 tbsp celery and 3 tbsp red onion.
For an extra-lemony salad, use lemon pepper instead of regular salt and pepper.
