1/2cupRao’s pizza sauceor other low-carb pizza sauce
1/4cupshredded Mozzarella cheese
1/4cupfresh Mozzarella slices
2tbspshredded Fontina cheese or Parmesan cheese
optional: fresh basil, red pepper flakes
Instructions
Preheat oven to 425 F.
To Make Chicken Crust:
Combine ground chicken, Parmesan cheese, Mozzarella, Italian seasoning, garlic powder, onion powder, salt, and pepper in a medium bowl. Mix until well-combined.
Transfer mixture to a piece of parchment paper. Top with another piece of parchment paper and flatten mixture to a 1/4-inch thick circle, using a rolling pin. Remove top piece of parchment and discard. Place parchment with chicken mixture onto a baking sheet. Bake at 425 F for 20 minutes.
To Add Toppings:
Top baked Chicken Crust with pizza sauce and cheeses. Return to oven and bake an additional 8-10 minutes, or until cheese is melty and crust is golden.
Top with fresh basil and red pepper flakes, if desired.
Notes
Look for a pizza sauce with 3g net carbs per 1/4 cup, or less.
