3/4cupshredded cheddar cheeseor any shredded cheese of choice

Instructions
Preheat oven to 350 F.
In a large skillet, cook bacon over medium-high heat. When the bacon is done cooking, let it cool, then crumble it into a bowl and set aside.
In 3 tbsp bacon grease (save the remainder for later use), sauté the onion until tender. Remove from heat and set aside.
In a large bowl, combine eggs, heavy whipping cream, almond flour, parsley, thyme, and salt and pepper to taste. Then add bacon, onion, and cheese and mix again.
Pour quiche mix into a pie pan or baking dish sprayed with non-stick cooking spray, then bake for 35-45 minutes. The quiche should be firm in the middle and lightly browned on the top.
