This colorful salad is almost too pretty to eat!

Course: Salad, Vegetable
Servings: 2
  1. Place the lettuce at the bottom of a bowl, and arrange the remaining vegetables in a rainbow pattern on top of the lettuce.

  2. Top with the juice of one squeezed lemon, 2 tablespoon extra-virgin olive oil, and salt and pepper to taste.
