Let’s face it: eating vegetables is annoying and often boring. This is especially true on keto when there are much tastier things to eat. Fat bomb or broccoli? FAT BOMB. Bacon or green beans? BACON. Cheese or spinach? CHEESE. (It should come as no surprise that only 6% of American adults eat enough vegetables, and I suspect the numbers are even worse for the keto population.)

But the truth is that vegetables are good for us. They are packed with nutrients that can help increase our energy levels, improve our complexion, and boost our immune system. And because they help us feel good, they can lead to more weight loss because we have the energy and stamina to live life with full gusto… which means more calorie burn.

One of the easiest ways to consume vegetables is through green smoothies. Instead of choking down a bowl of broccoli or a salad, you can blend your veggies into other tasty flavors and trick your tastebuds. I’ve personally been drinking green smoothies for about 18 years now (I had to redo the math several times on that one to make sure that was accurate… oy. Time flies!) and I credit them for keeping my vegetable intake high over the years.

The typical green smoothie, the one that I drank for many years, is blended with a ton of fruit. It was nothing for me to throw a banana, a mango, and a cup of strawberries into a green smoothie. It certainly tasted good, but that is a LOT of sugar to consume even if it’s “natural” sugar.

Since going keto, I’ve been working on keto green smoothie recipes. I’ve had to unlearn the typical “tons of fruit + a small amount of veggies” green smoothie combo, but I’ve been thrilled with the results.   • Unsweetened vanilla almond milk
  • Heavy whipping cream
  • Lakanto maple-flavored syrup
  • Vanilla extract (preferably NOT “imitation”)
  • Pumpkin pie spice
  • Ground ginger or fresh ginger (fresh highly recommended!)
  • Erythritol
  • Baby spinach
  • Cream cheese

How to Make a Pumpkin Spice Keto Green Smoothie

Ingredients

  • 1 cup unsweetened vanilla almond milk
  • 1 1/2 tbsp heavy whipping cream
  • 1 tbsp Lakanto maple-flavored syrup
  • 1/4 tsp vanilla extract
  • 1/2 tsp pumpkin pie spice
  • Pinch of ground ginger or small sliver of fresh
  • 1 1/2 tbsp erythritol (more if desired)
  • 1 cup baby spinach
  • 1 oz cream cheese
  • 1 tbsp MCT oil
  • 1/2 cup frozen riced cauliflower

Instructions

  • Add all ingredients to blender in order listed. Blend for a few seconds after every few ingredients until smooth.

Notes

To increase the protein content of the smoothie, you can add a scoop of vanilla whey protein isolate. (If adding this boosts the calories too much for you, split the smoothie into two servings.)

To thicken the smoothie, add a pinch or two of xanthan gum. Xanthan gum is net carb-free and is amazing for thickening smoothies, puddings, and sauces.
