Keto Green Beans + Maple Pecan

Let’s be real: eating vegetables can get a little boring sometimes. We know we need to include them in our daily diet, but sometimes the same old veggies can get repetitive… especially when you want to stick to low-carb veggies.

Maple Pecan Green Beans to the rescue! This simple recipe uses my divine Maple Pecan Butter recipe (which is pretty much like a dessert and you’ll probably want to have on hand at all times), crushed pecans, and fresh green beans. That’s it! These ingredients come together for a healthy green side dish that’s perfect for a casual lunch or dinner and also makes an ideal low carb holiday side dish. (This recipe is definitely on my Thanksgiving and Christmas dinner list!)

Keto Green Beans Ingredients

For the Maple Pecan Butter, you’ll need this seriously amazing stuff:

Stock up on a bottle (or five) of this… it is heavenly! Best of all, two tablespoons contain only 1g net carbs after you subtract the fiber and sugar alcohols.


How to Steam Fresh Green Beans

I highly recommend using fresh steamed green beans for this recipe. I haven’t made this with cooked frozen green beans so I can’t vouch for the result, but feel free to try it if that’s all you have on hand. But if you want to use fresh steamed green beans, read on…

There are a lot of ways to steam green beans, but I’ll share with you my favorite. I can’t remember where I found this method (somewhere on the depths of the Internet, I’m sure), but it’s definitely my go-to.

Clean and trim your green beans. Then fill a medium-sized pot with 3/4″ of salted water and bring it to a boil. Once it’s boiling, add your green beans, cover the pot, and cook for 3-5 minutes to your desired tenderness. (The first photo in the collage below is right before I turned off the heat and removed the cooked green beans.)

When the beans are done, drain any remaining water (there won’t be much) and add the green beans to really cold water or an ice bath. This will give you perfectly steamed green beans! Once they’re chilled, remove them from the water and pat them dry.

How to Make Maple Pecan Green Beans Keto

Melt Maple Pecan Butter in a pot or pan over medium heat. (It will separate a bit and that’s okay.)

Then, stir in your cooked green beans. Remove from the pot, divide into five servings, and cover each serving with 1 tbsp chopped pecans (feel free to add more pecans if you’d like!).

Why should you include more green beans in your diet? Well…

  • Green beans are loaded with healthy vitamins like Vitamin K and Vitamin C.
  • 100g of raw green beans actually contains almost 2g of protein!
  • They’re loaded with antioxidants.
  • They have a considerable amount of fiber, making them a veggie that is relatively low in net carbs.

Remember, when eating keto, you want a good portion of your carbs to come from healthy green vegetables like green beans!

What to Pair with Maple Pecan Green Beans

  • Keto Butter Burgers make the perfect lunch or dinner companion to Maple Pecan Green Beans.
  • More pecans! You can make these green beans a standalone meal by adding more pecans to bump up the fat content. Pecans are a fantastic nut for the keto diet because they’re low in net carbs.
  • Shredded mozzarella cheese stirred into these green beans when they’re still warm will be SO good.

    I made this recipe for Keto Green Beans with Pecans several times now. The whole family loves it including my children. I always have a batch of the Maple Pecan Butter in the refrigerator (great stuff!) so it is easy to get this dish prepared and on the table.
