Keto Omelet: In a Mug or Waffle Maker!

Keto omelet for one, please! This single-serve keto omelet can be made as a keto omelet-in-a-mug or as a crispy keto waffle (Chaffle). It’s perfect for busy mornings and is packed with eggs, cheese, and veggies.

Can I eat an Omelet on the Keto Diet?

You can eat an omelet on the keto diet as long as you substitute any high carb ingredients with low carb ingredients. You can use eggs, heavy whipping cream, cheeses, meats, and some low carb veggies like red peppers, onions, zucchini, broccoli and cauliflower. 

How to Make a Keto Omelet in a Mug (Version 1)

I don’t know about you, but I just love the whole “in a mug” trend that has taken off over the past several years. After you give this recipe a try, you’ll have to try my favorite keto mug recipe: a Keto Mug Cake!

To make this mug omelet, lightly spray the inside of a microwave-safe mug with non-stick cooking spray.

Then add the egg, cheeses, salt and pepper, and veggies.

Microwave for 1 minute, 45 seconds on high and check for doneness. If not yet cooked through, continue to cook in 15-second increments, keeping in mind that the high cheese content of this omelet will make it look a bit wet when hot. TIP: Do not overcook. When cooled off, it will firm up.

How to Make a Keto Omelet in a Waffle Maker (Version 2)

This is just a quick overview of how to make a keto waffle omelet. For the recipe in detail, scroll to the recipe card at the end of the post.

This version takes a tiny bit more prep and clean-up work, but it will give you a yummy and crispy keto omelet. To make this version, I highly recommend using the Dash Mini Waffle Maker. You can get one of your own below:

Get the Dash Mini Waffle Maker!

Using a Dash Mini Waffle Maker will yield two mini waffles…  or should I say “womelets”? 😉 If you use a regular-sized waffle maker, you’ll likely yield one waffle.

Mix the ingredients just like you would for the mug version, then pour the mixture onto a pre-heated waffle maker that has been lightly sprayed with non-stick cooking spray. TIP: If using a mini waffle maker, you will need to divide the batter in half.

How to Make Keto Meal Prep Omelets

How do you Make a Keto Omelet?

You can make a an omelet keto-friendly by using low carb ingredients and avoiding higher carb ingredients. You substitute heavy whipping cream for the milk, and use low carb vegetables, meats and cheeses for the filling.

Is it Keto Omelet or Keto Omelette?

Have you ever wondered to yourself: “Is it omelet or omelette?” I admit that “omelet” drives me nuts because it looks so unsophisticated next to “omelette.” 😉 Here’s the difference:

  • Omelet is the American English spelling.
  • Omelette is the British English spelling, which also happens to be the modern French spelling.

According to Grammarly, “omelet” originated in the 17th century in France and became the version adopted in American English.

Keto Omelet: In a Mug or Waffle Maker

Ingredients

  • Non-stick cooking spray
  • 1 tbsp red onion finely chopped
  • 2 tbsp red pepper finely chopped
  • 1/4 cup fresh spinach chopped
  • 1 large egg
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup shredded cheddar cheese
  • 1/8 tsp salt
  • 1/8 tsp pepper

Instructions

Mug Version

  • Lightly spray the inside of a microwave-safe mug with non-stick cooking spray.
  • Crack egg into mug and beat with a fork.
  • Add cheese, salt, and pepper, and mix thoroughly to combine.
  • Then add veggies and mix thoroughly so the egg/cheese mixture is evenly distributed.
  • Microwave for 1 minute, 45 seconds on high and check for doneness. If not yet cooked through, continue to cook in 15-second increments, keeping in mind that the high cheese content of this omelet will make it look a bit wet when hot. (When cooled off, it will firm up.)
  • Let cool for 3-5 minutes before digging in.

Waffle Maker Version

  • Lightly spray a waffle maker (preferably a Dash Mini Waffle Maker) with non-stick cooking spray and plug it in/turn it on to warm it up.
  • Crack egg into a bowl and beat with a fork.
  • Add cheese, salt, and pepper, and mix thoroughly to combine.
  • Then add veggies and mix thoroughly so the egg/cheese mixture is evenly distributed.
  • If using a mini waffle maker, you will need to divide the mixture in half.
  • Pour the mixture (or half of the mixture) onto the preheated waffle maker and cook until beginning to crisp on the outside.
  • Remove and place on plate. If necessary, cook the other half of the batter.

Notes

    Made this this morning, very tasty! I didn’t spray the mini waffle maker, they came out with no sticking. This would be very easy to change out veggies, add cooked & crumbled bacon, etc. Thanks for the recipe; I will be making this a lot!
